Directions
Preheat oven to 425 degrees, grease a 9x13 baking dish
Pat fish fillets dry with paper towel then season with salt and pepper. Set aside.
In a shallow bowl or plate mix panko breadcrumbs, parmesean cheese, and cajun seasining. Set aside.
In a seperate bowl mix mayo and butter.
Smother and cover each fish fillet in mayo mixture
Dredge mayo coated fillet in breadcrumb mixture pressing lightly to ensure it sticks
Arrange fillets in 9x13 baking dish
Bake in pre-heated oven until golden brown and internal temperature has reached 145 degrees. Can also broil for a few minutes at the end if you like it nice 'n crispy! Cook time will depend on size of fillets but 7-10 minutes is the average. We recommend using an instant read thermometer.
