Capt. Fox's Famous Fishcakes

Ingredients

 

  • 2 lb firm, white fish (we use spanish mackerel or bluefish)
  • 2 Tablespoons butter
  • 1 Tablespoon Zaterain's liquid Shrimp & Crab boil 
  • 2 Tablespoon mustard
  • 1 Box of crackers (ritz, saltine, or club)
  • 1 Cup of Mayo
  • 1/2 Cup chopped white onion
  • 2 Eggs
  • 1/2 Teaspoon garlic powder
  • 2 Tablespoons water
  • 1/4 Cup parsley 
  • 1/4 Cup green onion
  • Cajun Seasoning (to taste)
  • 3-4 Tablesspoons vegtable oil  

Directions

 

  1. Pat dry and season fish fillets with salt & pepper
  2. Melt butter in frying pan 
  3. Add fish fillets, crab boil and water to pan and cover with lid,.
  4. Steam until fish is cooked through and reaches an internal temperature of 145 degrees 
  5. While fish is steaming, combine all remaining ingredients EXCEPT vegtable oil in a bowl 
  6. Using a fork, gently flake steamed fish and add to bowl 
  7. Form mixture into 3/4 " patties
  8. Heat oil in frying pan and add patties frying until crisp, working in batches
