Fried Grouper Bites

Ingredients

 

  • 1 lb Grouper, cut into bite size bits
  • 3/4 Cup All-Purpose Flour
  • 2 Tablespoons cajun seasoning
  • ~1 cup oil for frying (canola, veg, peanut, whatever you like)
  • 2 Tablespoons Corn Starch
  • 1/4 Teaspoon baking powder
  • 3/4 cup beer (or water)


Directions

 

  1. Heat oil in cast iron skillet or dutch over until 375 degrees
  2. Pat fish dry and cut into bite size pieces (about 1 inch)
  3. Add flour, cornstarch, cajun seasoning and baking powder to bowl and whisk
  4. Mix dry mix with 3/4 cup beer or water to make batter
  5. Dip fish bites in batter until completely coated and use tongs to fry each bite in oil 
  6. Fry until internal temp reached 145 and set cooked grouper bites on paper towel lined plate to drain excess oil
  7. Let cool and enjoy!
